Banana Omelettes - Gluten Free Pancakes
Banana Omelettes also known as Maruya is a fun, quick and easy snack to make for the lunch box or breakfast, and oh so healthy. Especially good for those with gluten intolerance. Get your day off to a great start with this energy boosting, easy to prepare quick mock "pancake" recipe.
What you need:
1 Banana (mashed)
2 Eggs (seperated, we prefer the recipe without egg yolk, some people add only one egg yolk)
Beat the egg lightly with a whisk and fold into mashed banana. Fry in heated pan with a little olive oil or butter. (Just like pancakes).
Variations:
*Add a few drops of vanilla essence and a pinch of cinnamon.
*Add a table spoon full of raw oats.
*Add a little bit of sugar to the mixture and top with syrup.
*Add a dash of freshly grated nutmeg, or cardamon-chai spices and fry in coconut oil.
*Top pancakes with fresh fruit or berries.
*Drizzle with melted nutella or honey.
*Top with chopped apple and yogurt.
